My mommy’s recipe….This one is for my hubby since its his favorite sweet!

Ingredients (milk):

6 cups water

9 tbs powdered milk

6 tbs sugar

Ingredients (dumplings):

1 egg

1 cup powdered milk

1/2 tsp baking powder

1 tbs Vegetable oil

Method:

1. Heat the milk with the water in a pot

2. Add the sugar and mix well till all dissolves

3. In a separate bowl, add the milk, egg, baking powder and oil

4. Mix all the ingredients well till it becomes into a dough

5. Make the dough into small balls (will make approx 12-15) and add into the milk as it starts to boil

6. Cook for 5-10 minutes, bring the milk to a boil and shut off the heat.

7. Let the ras malai cool down, then shift into a serving bowl.

A few notes:

. Don’t cover the pot with a cover at any point – especially not while the rasmalai is cooling down

. Don’t think ”i’ll make all the balls first and then put them in the milk all together” – a BIG NO NO!

. Don’t keep in the fridge before it cools down – it will make the dumplings hard

Serving suggestions:

Grind pistachio and garnish the rasmalai before serving.

I think what shocks most people about this particular dish is that, this rice dish is yellow in color! And the other different thing is that it does not have any meat or chicken… so here goes…

Ingredients:

Rice: 3 mugs

Fenugreek seeds (methi): a pinch

Onion: 5 (grinded)

Tumeric powder: 1/4th tsp

Corainder powder (dhanya): 3 tsp

Red chilli: 1/4th tsp

Salt: 4 tsp

Potatoes: 8 small peices

Oil: 3 tbsp

Method:

1. Wash and soak the rice in water for half-an-hour and cut the potatoes into medium size chunks

2. Heat the oil and fenugreek seeds. When the seeds become start to become black, remove the pot from the heat and let it cool.

3. Add in grinded onion, turmeric powder, salt, red chilli & dhanya and mix well

4. When the spices become red (but don’t let it burn), add in the potatoes and cook till the potatoes are half-done

5. Now add in the rice with 4 glasses of water and cook on medium heat till all water evaporates (don’t cover the pot)

6. Once the water evaporates, cover the pot, shift the pot onto a “tawa” (griddle) and cook on low heat till you see steam coming out.

Serving suggestions: Serve with either “Timater ki chutney” (Tomato dip) or “Hari chutney” (green coriander chutney)!

I remember making this dish on the day i had invited my newly married cousin and his wife to dinner for the first time ever… i also think it was my first time ever making Chinese at all!… and the thing is, my father was a lot more tense than i was about it turning out nice

The recipe below makes a nice thick sauce (more like ketchup texture) but i like it better as a liquidy sauce so i add a lot more water than the suggested amount. Add much as you like as per your preference.

Ingredients:
Chicken popcorn: separately prepared 1kg boneless chicken

Soya Sauce: 3 tbs
Ketchup: 9 tbs
Vinegar: 6 tbs
Sugar: 6 tbs

Cornflour: 3 tbs
Oil: 6 tbs

Garlic: 3 tsp (grinded)
Ginger: 1-1/2 tsp (grinded)
Onion: 3 small
Bellpepper: 3 small
Crushed red chillies: 3/4th tsp (this will make the sauce chilli, so put it in accordingly)
Salt: According to taste

Method:
1. In a bowl, mix Soya sauce, ketchup, vinegar and sugar into 2-1/2 cup of water till all the sugar dissolves
2. Cut the onion and bellpeppers into 2-inch squares
3. Heat the oil and stir fry the grinded ginger, garlic, onion, bellpeppers, crushed red chilli and salt for 2 minutes
4. Add the soya sauce mixture into the pot and bring to a boil
5. Now mix the corn flour in a bit of water and make sure that it doesn’t become lumpy
4. Slowly add the cornflour into the sauce and keep stirring at all times. I usually add about 6-8 mugs of water about now for a more liquidy sauce…
5. Bring to another boil and then add the chicken popcorn

Dish is ready!

Serving suggestions:
With chicken or vegetable fried rice! yummmmmmmy!
