I usually cook the eggs in 3 batches & stack them over each other when done – since the egg, with tomatoes and zaatar, tends to become really heavy to turn over without breaking.
Ingredients:
3 eggs
A pinch of salt
1 tomato
1 Onion
1 tbs Zaatar (dried oregano)
1 slice of Cheese
1 tbs Coriander
2 Green chilli (optional)
Method:
1. Finely chop tomatoes, onions, coriander and green chilli
2. Break the eggs into a bowl & add onions, coriander and green chilli (add a tbs of water to make the eggs fluffier)
3. Heat oil in a pan and add the beaten eggs into it
4. Sprinkle the tomatoes and zaatar liberally over the eggs
5. Cook well on both sides till light brown in color & serve!
Serving suggestions:
Serve as is with toasted bread or add cheese to make into a sandwich!
